🌶️🧀 Smoky Jalapeño Popper Meatloaf with Ranch
🛒 Ingredients
2 lbs ground beef (or mix of beef and pork)
1 cup breadcrumbs
2 large eggs
1/2 cup shredded cheddar or pepper jack cheese
2–3 jalapeños, finely chopped (seeds removed for mild heat)
4 oz cream cheese, softened
1 tsp garlic powder
1 tsp smoked paprika
1 tsp onion powder
Salt & pepper to taste
Optional: chopped parsley for garnish
👩🍳 Instructions
Prepare the Meatloaf Mixture
In a large bowl, combine ground beef, breadcrumbs, eggs, garlic powder, onion powder, smoked paprika, salt, and pepper.
Fold in chopped jalapeños, cheddar, and cream cheese until evenly distributed.
Shape the Meatloaf
Transfer the mixture to a greased loaf pan or shape into a loaf on a baking sheet.
Bake
Preheat oven to 350°F / 175°C.
Bake for 50–60 minutes, until internal temperature reaches 160°F / 71°C.
Serve
Let rest 5–10 minutes before slicing.
Garnish with parsley if desired and serve warm.
