1Β½ cups creamy peanut butter

 

Β½ cup unsalted butter, softened

 

1 teaspoon vanilla extract

 

2½–3 cups powdered sugar (adjust for firmness)

 

ΒΌ teaspoon salt (optional, but recommended)

 

🍫 Chocolate Coating

 

2 cups semi-sweet chocolate chips

 

1–2 tablespoons coconut oil or shortening (for smooth dipping)

Mix the base

In a large bowl, beat peanut butter and butter until smooth and creamy.

 

Add flavor

Mix in vanilla and salt.

 

Sweeten & thicken

Gradually add powdered sugar until the mixture is firm enough to roll but not crumbly.

 

Roll

Scoop and roll into 1-inch balls. Place on a parchment-lined baking sheet.

 

Chill

Refrigerate for 30 minutes (or freeze for 15) so they hold their shape.

 

Melt chocolate

Microwave chocolate chips and coconut oil in 30-second intervals, stirring until smooth.

 

Dip

Dip each ball into chocolate using a fork or toothpick. Let excess drip off.

 

Set

Place back on parchment and chill until chocolate is firm.

Fridge: up to 1 week

 

Freezer: up to 2 months (great straight from frozen!)
