Lemon Butter Salmon with Crispy Potatoes & Broccoli

Ingredients
For the Salmon:
4 salmon fillets (150–180g each)
2 tbsp melted butter (or olive oil for lighter option)
1 tbsp olive oil
3 cloves garlic, minced
Zest of 1 lemon
1 tbsp fresh lemon juice
½ tsp paprika
½ tsp salt
¼ tsp black pepper
1 tbsp fresh parsley, chopped (optional)
For the Crispy Potatoes:
500g baby potatoes, halved
2 tbsp olive oil
½ tsp garlic powder
½ tsp paprika
½ tsp salt
¼ tsp black pepper
For the Broccoli:
3 cups broccoli florets
1 tbsp olive oil
Salt & pepper, to taste
Squeeze of lemon (optional)
Instructions
1️⃣ Roast the Potatoes
Preheat oven to 425°F (220°C).
Toss potatoes with olive oil, garlic powder, paprika, salt, and pepper.
Spread cut-side down on a baking sheet.
Roast for 25–30 minutes, until golden and crispy.
