🍽️ Cottage Cheese Lasagna Bake (Mushroom & Spinach)
This hearty lasagna bake layers creamy cottage cheese with savory mushrooms and fresh spinach for a cozy family dinner!
Ingredients:
• 12 lasagna noodles
• 2 cups cottage cheese
• 2 cups fresh spinach, chopped
• 1 cup mushrooms, sliced
• 2 cups marinara sauce
• 1 cup shredded mozzarella cheese
• 1/2 cup grated Parmesan cheese
• 1 teaspoon garlic powder
• 1 teaspoon Italian seasoning
• Salt and pepper to taste
• Olive oil for sautéing
Instructions:
1. Preheat your oven to 375°F (190°C).
2. Cook the lasagna noodles according to package instructions; drain and set aside.
3. In a skillet, heat olive oil over medium heat. Add mushrooms and sauté until soft, about 5 minutes. Stir in spinach and cook until wilted. Season with garlic powder, Italian seasoning, salt, and pepper.
4. In a baking dish, spread a layer of marinara sauce on the bottom.
5. Layer 3 lasagna noodles over the sauce, followed by half of the cottage cheese, half of the mushroom and spinach mixture, and a sprinkle of mozzarella.
6. Repeat the layers, finishing with the remaining noodles, marinara sauce, mozzarella, and Parmesan on top.
7. Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 15 minutes until bubbly and golden.
8. Let it cool for a few minutes before slicing and serving.
Pro Tip: For extra flavor, mix a pinch of red pepper flakes into the marinara sauce for a subtle kick!
