Avocado Toast Duo with Soft-Boiled Egg & Fresh Dill 🍳🍞
A gourmet-style breakfast or brunch dish with creamy avocado, perfectly jammy eggs, whipped cheese, and fresh herbs layered over toasted sesame sourdough.
𝐈𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭𝐬:
𝗕𝗮𝘀𝗲:
2 slices sourdough bread (preferably sesame-crusted)
1 ripe avocado
2 large eggs
2 tbsp whipped cream cheese or Greek yogurt (for spread)
1 tsp lemon juice
Salt & black pepper to taste
𝗧𝗼𝗽𝗽𝗶𝗻𝗴𝘀:
Fresh dill (a few sprigs)
Crushed red pepper flakes (optional)
Everything bagel seasoning or sesame seeds (optional)
𝐃𝐢𝐫𝐞𝐜𝐭𝐢𝐨𝐧𝐬:
1️⃣ Boil the Eggs
Bring a pot of water to a boil. Gently add eggs and boil for exactly 7 minutes. Transfer to an ice bath, peel once cool, and slice in half or thirds.
2️⃣ Toast the Bread
Toast the sourdough slices until golden and crisp.
3️⃣ Prep the Avocado
Mash half the avocado with lemon juice, salt, and pepper. Thinly slice the other half.
4️⃣ Assemble the Toasts
Toast 1: Spread cream cheese on one toast. Layer with thinly sliced avocado. Sprinkle with dill and black pepper.
Toast 2: Spread mashed avocado on the second toast. Top with soft-boiled egg slices, fresh dill, and optional chili flakes or seasoning.
5️⃣ Serve
Enjoy warm with a drizzle of olive oil or a squeeze of lemon if desired.
