Sugar-Free Oatmeal, Apple, and Carrot Bake Recipe
Ingredients:
2 cups (200 g) rolled oats, chopped in a blender
1 teaspoon baking powder
1 cup (240 ml) milk of your choice (almond milk, oat milk, or regular milk)
1 carrot, grated
9 dried apricots, rinsed with hot water and chopped
4 tablespoons raisins, rinsed with hot water
1 apple, grated
1 teaspoon cinnamon
3 eggs
Instructions:
Prepare the Ingredients:
Preheat your oven to 350°F (175°C).
Chop the rolled oats in a blender to create a finer texture.
Rinse the dried apricots and raisins with hot water, then chop the apricots into small pieces.
Grate the carrot and apple using a fine grater. Set aside.
Mix the Wet Ingredients:
In a large bowl, whisk together the eggs, milk, and cinnamon.
Add the grated carrot and apple, chopped apricots, and raisins to the bowl. Mix well to combine.
Combine Dry Ingredients:
In a separate bowl, combine the chopped oats and baking powder. Stir to ensure the baking powder is evenly distributed through the oats.
Combine Wet and Dry Ingredients:
Add the oat mixture to the wet ingredients and stir well until everything is fully combined.
Bake:
Grease a baking dish (approximately 9×9 inches) or line it with parchment paper.
Pour the oatmeal mixture into the baking dish and spread it out evenly.
Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
Serve:
Once baked, allow it to cool slightly before cutting into squares or serving as individual portions.
This bake can be enjoyed warm as a filling breakfast or snack, and it keeps well in the fridge for a few days.
