🥔🧄 Crock Pot Creamy Loaded Potato Soup
🛒 Ingredients
4–5 medium potatoes, peeled and diced
1 lb bacon, cooked and crumbled
1 medium onion, diced
3 cloves garlic, minced
4 cups chicken broth
1 cup milk or cream
1 cup sour cream
1 ½ cups shredded cheese (cheddar or blend)
2 tbsp butter
1 tsp garlic powder
½ tsp onion powder
Salt & black pepper to taste
Optional toppings: extra cheese, bacon, green onion
👩🍳 Instructions
Prepare Ingredients
Peel and dice potatoes.
Cook and crumble bacon. Set some aside for topping.
Build the Soup
Add potatoes, onion, garlic, broth, salt, pepper, garlic powder, and onion powder to the crock pot.
Stir butter in.
Slow Cook
Cook on LOW 6–7 hours
or HIGH 3–4 hours
until potatoes are tender.
Make it Creamy
Lightly mash some of the potatoes in the pot to thicken.
Stir in milk/cream, sour cream, cheese, and most of the bacon.
Cook another 10–15 minutes until melty and creamy.
Serve
Ladle into bowls, top with extra bacon, cheese, and green onion if desired. Enjoy warm!
