Blueberry Streusel Muffins (Bakery Style) Ingredients
Muffin Batter
2 cups all-purpose flour
2 tsp baking powder
½ tsp baking soda
½ tsp salt
½ cup unsalted butter, melted
¾ cup granulated sugar
2 large eggs (room temp)
1 cup sour cream (or full-fat Greek yogurt)
1½ tsp vanilla extract
1½ cups fresh or frozen blueberries
1 tbsp flour (to toss blueberries)
🍥 Streusel Topping
½ cup all-purpose flour
⅓ cup brown sugar
¼ cup granulated sugar
½ tsp cinnamon
¼ tsp salt
4 tbsp cold unsalted butter, cubed
👩‍🍳 Instructions
1️⃣ Prep
Preheat oven to 425°F (220°C).
Line a muffin pan with tulip liners (like in your photo) or standard liners.
2️⃣ Make Streusel
Mix flour, sugars, cinnamon, and salt.
Cut in cold butter with fingers or fork until crumbly.
Place in fridge while you prepare batter.
3️⃣ Make Batter
In a bowl, whisk flour, baking powder, baking soda, and salt.
In another bowl, whisk melted butter and sugar.
Add eggs, sour cream, and vanilla — mix until smooth.
Gently fold dry ingredients into wet (don’t overmix).
Toss blueberries with 1 tbsp flour and fold in gently.
