Ingredients
For the Chicken
4 boneless, skinless chicken breasts (or thighs)
2 tbsp olive oil or butter
Salt and black pepper, to taste
1 tsp dried oregano
½ tsp paprika (optional)
½ tsp garlic powder
For the Creamy Mushroom Sauce
2 tbsp olive oil or butter
1 small onion, finely chopped
3 cloves garlic, minced
2 cups mushrooms, sliced (button or cremini)
½ tsp dried thyme
½ tsp dried oregano
½ cup chicken broth
1 cup heavy cream (or half-and-half)
¼ cup grated Parmesan cheese
1 tbsp lemon juice
Salt & black pepper, to taste
1 tbsp fresh parsley, chopped
Instructions
1️⃣ Season & Sear the Chicken
Pat chicken dry.
Season with salt, pepper, oregano, paprika, and garlic powder.
Heat olive oil in a large skillet over medium-high heat.
Sear chicken 5–6 minutes per side until golden and nearly cooked through.
