Skillet Roasted Potatoe
Crispy Skillet Roasted Potatoes with Garlic and Herbs
Ingredients:
2 pounds baby potatoes, halved
3 tablespoons olive oil
4 cloves garlic, minced
1 teaspoon dried rosemary
1 teaspoon dried thyme
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Directions:
Heat olive oil in a large skillet over medium-high heat.
Add the halved baby potatoes to the skillet, cut side down, and season with salt and pepper.
Cook for about 10-12 minutes, without stirring, until the potatoes are golden brown and crispy on the bottom.
Flip the potatoes and add the minced garlic, rosemary, and thyme to the skillet.
Continue to cook for another 10-12 minutes, stirring occasionally, until the potatoes are tender and golden brown all over.
Remove from heat and garnish with fresh parsley before serving.
